These spicy sardine tostadas are delicious, so easy to make, and packed with nutrients. Plus Wild Planet's sardines are sustainably sourced and are an easy, tasty way to eat lower on the food chain.
Fajita shells, fried (or you can purchase pre-made tostada shells)
Refried beans, about 1 Tbsp per tostada
2 cups cherry Tomatoes, quartered
1 cup pickled red Onion
1 Jalapeno, sliced
1 (4.4oz) can Wild Planet Wild Sardines in Extra Virgin Olive Oil
Crumbled Cotija cheese, about 2 tsp per tostada
Fresh cilantro, chopped
Heat sardines in a cast iron skillet for about 2 minutes on each side, just to warm them up.
Assemble tostadas: spread refried beans on the base of each tostada. Top with cherry tomatoes, pickled red onion, jalapeno slices, 1-2 sardines, crumbled cotija cheese and fresh cilantro.
