Ingredients

  • 8 oz. Soba (buckwheat) noodles

  • 1 (5 oz) can Wild Planet Albacore Wild Tuna

  • ½ small Carrot julienned

  • ¼ Cucumber julienned

  • ⅓ cup chopped Iceberg lettuce

  • 1 Green onion chopped

  • 1 tsp toasted Sesame seeds

  • Roasted Seaweed for garnish

  • Dressing

  • 2 Tbsp Rice vinegar

  • 2 Tbsp Soy sauce

  • 1 Tbsp Sugar

  • ¼ cup Vegetable oil

  • 1 tsp Sesame oil

Directions

  1. Cook your soba noodles per package instructions.

  2. Chop/prepare your fresh vegetables.

  3. Drain tuna and break apart into smaller pieces.

  4. Prepare the dressing by mixing together all of the ingredients.

  5. In a mixing bowl, combine the cooked soba noodles, carrots, cucumbers, lettuce, tuna (reserve some for garnishing) and dressing. Mix well.

  6. Plate your noodle salad then garnish with chopped green onions, reserved tuna pieces, sesame seeds and roasted seaweed strips. Enjoy!
