Cranberry Tuna Salad Pinwheels
1 5oz can Wild Planet Foods Skipjack tuna, drained & mashed
½ of a honeycrisp apple, cored & diced
½ of a celery stalk, chopped
2 Tbsp red onion, finely chopped
3 Tbsp mayonnaise (plus extra for the wrap)
1½ tsp lemon juice
Salt & pepper, to taste
2 Tbsp leftover cranberry sauce
Handful of spinach
1 flour tortilla or wrap

1. Mix your tuna, chopped apple, celery, onion, mayo & lemon juice together & season with salt & pepper to taste.
2. Then spread a small spoonful of mayo over your tortilla & spread your cranberry sauce over half the mayo layer.
3. Place a line of spinach in the center of the tortilla & spread your tuna salad over the top.
4. Roll up the tortilla as tight as you can, wrap it in plastic wrap & place it in the fridge until your ready to eat.
5. Once ready, cut the wrap into 1 inch slices & serve with extra cranberry sauce on the side.
