Ingredients

  • 1 (3.9oz) can Wild Planet Wild Smoked Pink Salmon, drained

  • 1 Fresno Pepper, seeds removed and finely chopped

  • 1 Tbsp Cilantro, chopped

  • Juice of 1 Lime

  • 3-4 Spring Roll Wrappers

  • 1-2 Scallions, sliced

  • ½ ripe Avocado, sliced

  • 1 Tbsp Olive Oil

  • 2 Tbsp Soy Sauce

  • 1 Tbsp Sweet Thai Chili Sauce

Directions

  1. In a small bowl, combine the wild smoked pink salmon, chopped fresno pepper, cilantro, and lime juice. Season with salt and black pepper to taste. (If time allows, set aside to marinate 20-30 minutes.)

  2. Dip the spring roll wrappers in water for 30-45 seconds, until flexible. Place on a clean, nonstick surface.

  3. Place a third or a fourth (depending on how many you plan to make) of the firecracker salmon mixture, scallions, and avocado into the center. Roll tightly. Repeat with remaining spring roll wrappers.

  4. Heat up the olive oil in a skillet over medium high heat for 1 minute. 

  5. Add the salmon rolls to cook 1-2 minutes on each side, until golden and crispy. 

  6. For the sauce, combine the soy sauce and sweet thai chili sauce.
