Ingredients

  • 2 (5oz) cans Wild Planet Albacore Wild Tuna

  • 1 medium Avocado

  • ⅔ cup Plain Yogurt 

  • ⅓ cup Mayonnaise

  • 2 Garlic Cloves

  • 2 large handfuls of Arugula, divided

  • ¼ cup chopped Parsley

  • ¼ cup chopped Basil

  • 2 Tbsp snipped Chives, plus more for topping

  • ½ Lemon, juiced

  • ½ tsp Salt, plus more to taste

  • ½ tsp Pepper, plus more to taste

  • 6oz Cheese of choice, divided (I used a cheddar goat cheese)

  • 4 slices Sourdough Bread, or bread of choice

Directions

  1. Green Goddess Dressing: Add the avocado, yogurt, mayo, garlic, one handful of arugula, parsley, basil, chives, lemon juice, salt and pepper to a food processor or blender and blend until creamy and smooth.

  2. To a bowl add your tuna, one handful of arugula and approximately 1/4 cup of your green goddess dressing. Toss until well combined.

  3. Toast your bread and add a layer of green goddess sauce to each slice, followed by the tuna mixture and cheese. Place toasts in the oven on broil to melt the cheese for about 1 to 2 minutes.
  4. Garnish with chives and enjoy!
