Ingredients

  • 1 (5oz) can Wild Planet Wild Albacore Tuna

  • 1 Tbsp Olive Oil
  • 2 Scallions, chopped, divided
  • 2 Garlic Cloves, minced, divided
  • 1 tsp Soy Sauce

  • 1 package Ramen Noodles (any variety)
  • 1 large Egg plus 1 Egg Yolk
  • 2-3 Tbsp Plain Greek Yogurt
  • ½ tsp each: Italian Herb Seasoning, Onion Powder, Paprika (optional)

  • Chili Crisp Oil for serving (optional)

Directions

  1. Bring a small pot of water to boil over medium-high heat
  2. Gently lower whole egg into boiling water with a spoon
  3. Cook for 6 minutes for runny yolk
  4. Transfer to ice water bath for 5 minutes
  5. Peel and set aside
  6. Refill saucepan with fresh water and bring to boil for noodles
  7. Heat olive oil in a skillet
  8. Add drained tuna, half the scallions, and half the minced garlic
  9. Sauté 2-3 minutes
  10. Add soy sauce and cook another 1-2 minutes until crispy
  11. In serving bowl, combine egg yolk, remaining garlic, ramen seasoning packet, Greek yogurt, and optional seasonings
  12. Cook ramen noodles according to package directions
  13. One minute before noodles are done, add ½ cup pasta water to serving bowl
  14. Whisk until smooth and creamy
  15. Drain noodles and add to creamy sauce
  16. Toss to coat
  17. Top with crispy tuna, soft-boiled egg, remaining scallions
  18. Drizzle with chili crisp oil if desired
  19. Serve immediately
