Ingredients

  • 2 (4.4oz) cans Wild Planet Wild Mackerel Fillets In Extra Virgin Olive Oil

  • ¼ cup Olive Oil

  • 2 Tbsp Butter

  • ¼ cup Pine Nuts, toasted

  • 8 large Garlic Cloves, minced

  • ½ tsp Crushed Red Pepper Flakes (or more to taste, optional)

  • 2 large Lemons, juiced (~3 Tbsp juice), plus more to taste

  • Zest from 1 Lemon, plus more for garnish

  • 3 Tbsp Fresh Parsley, chopped

  • ½ cup Parmesan Cheese, freshly grated, plus more for serving

  • ½-1 cup Reserved Pasta Water, plus more as needed

  • 1lb Pasta of choice

  • Salt and Pepper to taste

Directions

  1. Bring large pot of salted water to boil

  2. Cook pasta until al dente according to package directions

  3. Reserve 1 cup pasta water

  4. Drain pasta and set aside

  5. In large skillet over medium heat, melt butter with olive oil

  6. Add minced garlic and crushed red pepper flakes

  7. Sauté until fragrant, about 1 minute

  8. Stir in mackerel

  9. Cook for 2-3 minutes, gently breaking up fish

  10. Add drained pasta and ¼ cup reserved pasta water

  11. Toss until heated through, adding more pasta water if needed for desired consistency

  12. Turn off heat

  13. Add salt, pepper, toasted pine nuts, lemon juice, lemon zest, parsley, and parmesan

  14. Toss to combine

  15. Taste and adjust lemon juice and salt as needed

  16. Transfer to serving bowl

  17. Garnish with extra parmesan and fresh parsley

  18. Serve immediately
