Ingredients

  • 1 (5oz) can Wild Planet Skipjack Wild Tuna

  • 3 Tbsp Mayonnaise
  • 1 tsp Whole-Grain Mustard

  • 2 tsp Lemon Juice

  • ½ tsp Lemon Zest

  • 1 stalk Celery, finely diced
  • 1 Scallion, thinly sliced
  • 2 Tbsp Capers, chopped
  • 1½ Tbsp Fresh Dill, chopped, divided
  • ½ tsp Kosher Salt

  • ½ tsp Freshly Ground Black Pepper

  • 2 slices Sourdough Bread (or any bread)
  • 1½ Tbsp Butter, softened
  • 3oz Sharp Cheddar Cheese, grated

  • 1 Tomato, thinly sliced

Directions

  1. Position oven rack second down from top
  2. Preheat broiler
  3. In a medium bowl, flake tuna with a fork
  4. Add mayonnaise, lemon zest, lemon juice, mustard, celery, scallion, 1 Tbsp dill, salt, and pepper
  5. Mix until well combined and set aside
  6. Spread butter on both sides of each bread slice
  7. Arrange on lined baking sheet
  8. Toast under broiler until golden brown, 2-3 minutes per side
  9. Remove from oven
  10. Distribute tuna salad evenly onto each toasted slice
  11. Top with tomato slices
  12. Divide grated cheese over tomatoes
  13. Return to broiler
  14. Broil for 3-5 minutes, watching closely, until cheese is melted, bubbly, and just starting to brown
  15. Remove from oven
  16. Top with remaining dill
  17. Serve immediately
