Ingredients

    For the Crispy Rice

  • 1½ cups Dry Sushi Rice

  • 3 cups Water

  • 1 tsp Fine Sea Salt

  • 1 Tbsp Potato Starch

  • 1 Tbsp White Wine Vinegar

  • Olive Oil for frying

  • For the Spicy Citrus Tuna

  • 2 (5oz) cans Wild Planet Foods Albacore Wild Tuna

  • Zest and Juice of 1 Lemon

  • Zest of 1 Orange

  • 1-2 Red Peppers, finely chopped

  • ⅓ cup Mayonnaise or Plain Greek Yogurt

  • 3 Tbsp Fresh Parsley or Chives, finely chopped

  • 3 Tbsp Soy Sauce, plus more for serving

  • Salt and Black Pepper to taste

  • Fresh Scallions, chopped, for serving

  • Jalapeño slices for garnish (optional)

Directions

    For the Crispy Rice

    1. Rinse rice until water runs clear

    2. Add to saucepan with water and salt

    3. Bring to boil over medium-high heat

    4. Reduce to simmer on low, cover, and cook 15 minutes

    5. Remove lid and steam 5 minutes

    6. Fluff with fork

    7. Stir in vinegar and potato starch

    8. Cool to room temperature

    9. Line 9x13" baking pan with parchment paper or plastic wrap

    10. Spread rice evenly using spatula

    11. Cover with plastic wrap

    12. Place similar-sized pan on top to press firmly and flatten

    13. Freeze for 20 minutes until firm (or refrigerate overnight)

    14. Heat 1-2" olive oil in frying pan over medium-high heat until glistening

    15. Slice semi-firm rice into bite-sized squares

    16. Fry in batches 2-3 minutes per side until golden brown

    17. Transfer to paper towel-lined plate

    For the Spicy Citrus Tuna

    1. Combine all tuna ingredients in large bowl

    2. Mash with fork until tuna is finely broken up

    3. Adjust mayo or yogurt as needed for mixture to hold together

    To Assemble

    1. Top each crispy rice square with spoonful of spicy citrus tuna

    2. Garnish with jalapeño slices if desired

    3. Serve with soy sauce mixed with fresh scallions for dipping
