Ingredients

  • ½ lb Pasta 

  • ¼ cup Pasta water, reserve 1/3 

  • 8 oz Mascarpone cheese 

  • 1 lemon, zest of a whole lemon, reserve 2 tsp of juice 

  • 2 (5 oz) cans Wild Planet Skipjack Wild Tuna

Directions

  1. Prepare the pasta as per packaging in salted water. Reserve 1/3 of a cup of pasta water, and put pasta to the side after draining. 

  2. In a pan over low heat add the mascarpone, 1/4 cup of pasta water, and lemon zest. Mix to combine and simmer on low until it thickens, approx. 3-5 minutes. Add in Wild Planet tuna and cook for another minute. 

  3. Once at the desired consistency (should be thick and able to coat pasta, if it has reduced too much add more pasta water) turn off the heat and let it cool down for a minute before adding in 2 tsp of lemon juice. Whisk vigorously to avoid curdling.  

  4. Add in pasta and toss. Serve immediately.
