1 (5oz) can Wild Planet Albacore Wild Tuna
1 Tbsp Mayonnaise
2 Tbsp Pesto
2-3 Tbsp Scallions, chopped
1 tsp Garlic Powder
½ tsp Golden Monk fruit or Coconut Sugar
½ tsp Dijon Mustard
2-3 Tbsp Lemon Juice
- Salt and Pepper to taste
- Chili Flakes, Dried Basil, and Dried Oregano (optional)
- Bread of choice
- Fresh Mozzarella, sliced
- Tomato, sliced
- Salt and Pepper
- Balsamic Glaze
- Fresh Basil Leaves
For the Pesto Tuna Salad
For Assembly
Directions
- Combine all pesto tuna salad ingredients in a bowl
- Mix thoroughly until well incorporated
- Toast bread slices lightly
- Spread pesto tuna mixture on bread
- Layer with tomato slices and fresh mozzarella
- Air fry or bake at 380°F for 5-6 minutes until cheese melts
- Season with salt and pepper
