This vibrant Sugar Snap Pea Sardine Salad celebrates the sweet crunch of fresh sugar snap peas paired with tender Wild Planet Sardines. Ingredients

  • 1 cup of Cherry or Grape Tomatoes, halved

  • 1 (4.4oz) can of Wild Planet Wild Sardines in Extra Virgin Olive Oil with Lemon

  • 4oz Sugar Snap Peas, cleaned and chopped

  • 1/2 Head of Frisée, cleaned and chopped

  • Dressing

  • Juice of 1 Lemon

  • Salt to taste

  • 1 tsp Dijon Mustard

  • 1/4 cup Extra Virgin Olive Oil

  • 1/4 tsp Red Pepper Flakes

  • 1 Garlic Clove, pressed

  • 1/2 tsp Honey

Directions

  1. Clean and wash your frisée. Trim and remove the outer bitter greens, until you reach the white and yellow heart of the frisée (the outer greens can be saved to sauté in a separate recipe). Break the white and yellow parts of the frisée into smaller pieces. Set aside.

  2. To make the dressing: In a small jar with a tight fitting lid, add the juice of 1 lemon, dijon mustard, extra virgin olive oil, pressed garlic, red pepper flakes, and honey. Secure the lid and shake until the dressing has emulsified. Salt to taste.

  3. In a large bowl, add your halved tomatoes, frisée, and chopped sugar snap peas. Add dressing as desired and toss gently.

  4. Serve in a salad dish and add your drained Wild Planet Wild Sardines in Extra Virgin Olive Oil with Lemon. Enjoy immediately.
