This tasty recipe uses Wild Planet's convenient Ready-to-eat Wild Tuna White Bean Salad. The salad is already so flavorful the additional ingredients are minimal - just a little fresh tomato, basil & parmesan, along with melty fresh mozzarella. Piled on top of an oven-baked sweet potato, this spin on a tuna melt is delicious and packed with nutrition.

Ingredients

  • 2 large Sweet Potatoes (or 3 small), halved lengthwise

  • Olive oil

  • Salt & pepper

  • 2 (5.6oz) cans Wild Planet Wild Tuna White Bean Salad Ready-to-eat Meal

  • 1 cup chopped Cherry Tomatoes

  • ⅓ cup chopped fresh Basil

  • ½ cup freshly grated Parmesan cheese, plus more for serving

  • 6 oz fresh Mozzarella, thickly sliced

  • Chopped scallions, optional

  • Chopped pistachios, optional

Directions

  1. Preheat the oven to 425.

  2. Drizzle olive oil on the bottom of a large sheet pan, season with salt and pepper, and place the sweet potatoes face down. Drizzle the tops with the oil and season with salt. Place in the oven for about 40 minutes, flipping halfway.

  3. While the sweet potatoes roast, make the tuna salad. Add the Wild Planet Wild Tuna White Bean Salad, tomatoes, fresh basil and Parmesan cheese to a medium bowl. Use a fork to break apart the tuna, mix all ingredients together and set aside.

  4. When the sweet potatoes are done roasting, remove them from the oven and gently mash each one down with a fork to create a slight divot in the center. Top each sweet potato with a slice or two of the mozzarella. Next, divide the tuna mixture equally and spoon on top of the mozzarella. Place the sweet potatoes back in the oven for about 8-10 minutes until cheese is melted

  5. Top the sweet potatoes with extra Parmesan cheese, the scallions and the pistachios, if using.
