Chicken Salad 3 Ways

Asian Chicken Salad

Makes 1 serving

Ingredients

1 (5oz) can Wild Planet Organic Roasted Chicken Breast, undrained
1 Tbsp slivered almonds, chopped
1/2 tangerine, peeled and chopped
1 Tbsp scallions, chopped
1 tsp mayonnaise
1/4 tsp sriracha
1/2 tsp coconut aminos

Instructions

Empty can of chicken breast into bowl. Using fork, break up slightly into small, bite-sized pieces. Add almonds, tangerine, scallions, mayonnaise, sriracha, and coconut aminos. Gently toss until combined. Serve immediately.

 

Cobb Chicken Salad

Makes 1 serving

Ingredients

1 (5oz) can Wild Planet Organic Roasted Chicken Breast, undrained
1 hard boiled egg, chopped
1 slice cooked bacon, crumbled
1 tsp parsley, chopped
1 Tbsp mayonnaise
1/2 tsp sea salt
1/2 tsp black pepper

Instructions

Empty can of chicken breast into bowl. Using fork, break up slightly into small, bite-sized pieces. Add egg, bacon, parsley, mayonnaise, sea salt, and black pepper. Gently toss until combined. Serve immediately.

 

Mediterranean Chicken Salad

Makes 1 serving

Ingredients

1 (5oz) can Wild Planet Organic Roasted Chicken Breast, undrained
1/4 cup chickpeas, mashed
1 small radish, finely chopped
1 Tbsp cilantro, finely chopped
1 Tbsp fresh lemon juice
1 Tbps extra virgin olive oil
1/4 tsp salt
1/8 tsp cumin

Instructions

Empty can of chicken breast into bowl. Using fork, break up slightly into small, bite-sized pieces. Add mashed chickpeas, radish, cilantro, lemon juice, extra virgin ole oil, salt, cumin. Gently toss until combined. Serve immediately.
