Ingredients

    For the Saffron Rice

  • 1 cup Basmati Rice
  • 1½ cups Water
  • Good pinch of Saffron or ¼ Tsp ground saffron
  • 2 Tbsp Unsalted Butter
  • 1 tsp Salt

  • For the Honey Harissa Tuna Balls

  • 3 (5oz) cans Wild Planet Albacore Wild Tuna

  • 1 large Egg
  • 3 Tbsp Fresh Parsley, finely chopped
  • 1 tsp each: Salt, Black Pepper, Garlic Powder, Onion Powder, Paprika

  • 2 Tbsp Olive Oil
  • ¼ cup Honey
  • 2-3 Tbsp Harissa
  • For the Herby Cucumber Salad

  • 1 English Cucumber, chopped
  • ½ pint Cherry Tomatoes, chopped
  • 2 Tbsp Fresh Dill, chopped
  • 1 Tbsp Olive Oil
  • 1 Tbsp Apple Cider Vinegar
  • Salt and Black Pepper to taste
  • For the Quick Roasted Red Pepper Hummus

  • 1 can Chickpeas, drained
  • 1 cup Roasted Red Peppers, drained
  • 2 Tbsp Tahini
  • 1 Tbsp Olive Oil
  • 2 Garlic Cloves (optional)
  • Juice of 1 Lemon
  • Salt to taste
  • For the Lemon Tahini Dressing

  • Juice of 1 Lemon
  • ¼ cup Tahini
  • ¼ cup Olive Oil
  • ¼ cup Red Wine Vinegar or apple cider vinegar
  • ⅓ cup Water
  • 2 Tbsp Fresh Dill, finely chopped
  • For the Pickled Onions

  • 1 large Red Onion, thinly sliced
  • 1 cup White Vinegar or apple cider vinegar
  • 1 cup Water
  • 2 Tbsp Granulated Sugar
  • 1 Tbsp Salt
  • For the Spicy Feta

  • 6-8 oz Feta, crumbled
  • 1-2 Jalapeños, finely chopped
  • Additional Sides

  • Fresh Cilantro, chopped
  • Avocado
  • Arugula and Kale Mix

Directions

    For the Saffron Rice

    1. Steep saffron in 3 Tbsp boiling water
    2. Rinse rice until water runs clear
    3. Sauté rice in butter for 2-3 minutes
    4. Add salt and water, bring to boil
    5. Simmer covered on low for 15-20 minutes
    6. Fluff with fork and stir in saffron mixture

    For the Honey Harissa Tuna Balls

    1. Combine tuna, egg, parsley, and seasonings

    2. Mash with fork until well combined
    3. Form into 10-12 balls
    4. Sear in olive oil over medium-high heat, 1 minute per side
    5. Remove balls, reduce heat to medium
    6. Add honey and harissa, cook 1-2 minutes until thick
    7. Glaze tuna balls and cool completely

    For the Herby Cucumber Salad

    1. Combine all ingredients until well mixed

    For the Quick Roasted Red Pepper Hummus

    1. Blend all ingredients in food processor until smooth
    2. Season with salt to taste

    For the Lemon Tahini Dressing

    1. Combine all ingredients and shake until mixed
    2. Season to taste

    For the Pickled Onions

    1. Combine all ingredients in 16 oz jar
    2. Refrigerate 2 hours to overnight

    For the Spicy Feta

    1. Layer feta and jalapeños in airtight container
