Huevos Rancheros with Tuna, Bean & Corn

Are you a fan of huevos rancheros? You’re going to love this take on this traditional Mexican breakfast dish! I’m so excited to have partnered up with my friends over at Wild Planet Foods to bring you huevos rancheros with a twist! For this recipe, I used the Ready-to-Eat Tuna Salad Bowls as the base on the tostada.

Are you a fan of huevos rancheros? You’re going to love this take on this traditional Mexican breakfast dish! I’m so excited to have partnered up with my friends over at Wild Planet Foods to bring you huevos rancheros with a twist! For this recipe, I used the Ready-to-Eat Tuna Salad Bowls as the base on the tostada.

Ingredients

  • Vegetable oil

  • 1/2 White onion, sliced

  • 1 Serrano pepper, sliced

  • 4 Roma tomatoes, diced 

  • 1/2 tsp dried minced garlic

  • 1/2 tsp salt 

  • 1/2 tsp oregano 

  • Dash of cumin 

  • 4 oz Tomato sauce 

  • Cilantro, fresh

  • 6 Soft tortillas 

  • 3 (5.6oz) bowls Wild Planet Wild Tuna, Bean & Corn Salad

  • 6 Eggs

  • Queso fresco, optional

Directions

  1. Line a baking sheet with parchment paper. Set aside. 

  2. Heat a pan and add in some vegetable oil. Then sauté sliced onion and sliced Serrano pepper until onions start becoming clear.

  3. Add in diced Roma tomatoes. Mix in the dried minced garlic, salt, oregano, and dash of cumin. 

  4. Add tomato sauce and a handful of cilantro to pan and let simmer for about 5 minutes. After 5 minutes, keep heat on low setting to keep warm.  

  5. While that’s simmering, heat up some oil in a skillet. Once oil is hot, fry your tortillas, one at a time.

  6. When frying the tortilla, hold it down in the oil with your tongs. Be sure to fry on both sides until you get a nice golden color.

  7. Place fried tortillas on prepared baking sheet. 

  8. Next, you’ll open up 3 bowls of Wild Planet Wild Tuna, Bean & Corn Salad. Spread the contents onto the tostadas. One salad bowl is enough to cover two tostadas. 

  9. Fry your eggs in the same skillet that you used to fry your tortillas. Add 1 egg on top of each tostada.

  10. Pour a serving of salsa over the tops of the eggs and finish with a bit of fresh cilantro and queso fresco or other crumbly cheese. Enjoy!
