These Middle Eastern style tuna salad stuffed peppers are my new go-to snack. They’re so refreshing and light- no mayo here!
2 (5oz) cans Wild Planet Albacore Wild Tuna
1/4 red onion, finely chopped
1 small tomato, finely chopped
1/4 cup crumbled feta
Handful of finely chopped parsley
Salt & Pepper to taste
1/2 tsp dried mint
1/2 tsp sumac
1/2 tsp Aleppo pepper
1/4 cup olive oil
1/2 large lemon, juiced
2 bell peppers, cut into halves and cleaned
Place tuna in bowl and flake with a fork.
Add onion, tomato, feta and parsley. Gently mix to combine.
Season with salt, pepper, dried mint, sumac, and Aleppo pepper. Stir together.
Add olive oil and fresh lemon juice.
Mix to ensure all flavors are well combined.
Stuff tuna salad filling into pepper halves and enjoy!
