Ingredients

    For the Potato Wraps

  • 2 medium Yellow Gold Potatoes
  • ½ cup Mozzarella Cheese, shredded
  • 2 Tbsp Olive Oil
  • ½ tsp Salt

  • ¼ tsp Black Pepper

  • For the Tuna Salad

  • 2 (5oz) cans Wild Planet Albacore Wild Tuna

  • ⅓ cup Mayonnaise
  • ½ Lemon, juiced and zested
  • Pinch of Salt
  • Black Pepper to taste
  • For Toppings

  • Pickles, sliced
  • Romaine Lettuce
  • Red Onions, thinly sliced

Directions

  1. Preheat oven to 375°F
  2. Line and grease a sheet pan
  3. Using a mandolin, thinly slice potatoes
  4. Arrange potato slices in overlapping rectangles on prepared pan (creating wrap-sized portions)
  5. Top with shredded mozzarella
  6. Spray or drizzle with olive oil
  7. Season with salt and pepper
  8. Bake on lower rack for 15-20 minutes until potatoes are tender and cheese is melted
  9. While wraps bake, prepare tuna salad by combining drained tuna, mayonnaise, lemon juice, lemon zest, salt, and pepper
  10. Mix until well combined
  11. Once potato wraps are done, let cool slightly
  12. Carefully lift each potato wrap from the pan
  13. Add tuna salad, pickles, romaine lettuce, and red onions
  14. Roll or fold like a wrap
  15. Serve immediately or pack for lunch
