Ingredients

    For the Spicy Tuna

  • 2 (5oz) cans Wild Planet Albacore Wild Tuna

  • 1 Tbsp Sriracha

  • 1 Tbsp Soy Sauce, low sodium

  • 1 Tbsp Mayo

  • Salt and Black Pepper to taste
  • For the Fried Sushi Rolls

  • 2 cups Cooked Sushi Rice
  • 1 Tbsp Rice Vinegar

  • 2 tsp Soy Sauce, low sodium

  • 3-5 Sushi Nori Seaweed Wraps
  • 1 Carrot, thinly sliced
  • 1 Avocado, thinly sliced
  • 1 cup Flour
  • 1 tsp Smoked Paprika

  • 1½ cups Fine Breadcrumbs
  • 2 large Eggs, beaten
  • 1-2 cups Neutral Frying Oil
  • For the Dipping Sauce

  • 1 cup Plain Greek Yogurt
  • ¼ cup Mayo
  • 1 Tbsp Sriracha

  • 1 Tbsp Soy Sauce

  • Juice of 1 Lemon

Directions

    For the Spicy Tuna

    1. Combine all spicy tuna ingredients in a large bowl
    2. Mash with a fork until very well combined
    3. Set aside

    For the Sushi Rice

    1. Combine cooked sushi rice, rice vinegar, and soy sauce
    2. Mix well and set aside

    To Form the Sushi Rolls

    1. Slice each nori sheet into 4 equal squares (about 4"x4")
    2. Place one square on bamboo sushi mat lined with plastic wrap
    3. Add generous scoop of sushi rice and press to cover nori square
    4. Flip over so rice is on plastic wrap
    5. Layer with spicy tuna, sliced carrots, and avocado
    6. Using mat and plastic wrap, roll tightly
    7. Compact rice around filling with hands
    8. Unroll and place on parchment paper
    9. Repeat with remaining squares

    To Batter and Fry

    1. Set up three bowls: flour mixed with paprika, beaten eggs, and breadcrumbs
    2. Dredge each roll through flour, then eggs, then breadcrumbs
    3. Heat oil in large skillet to 350°F over medium-high heat
    4. Fry rolls 2-3 minutes per side until golden and crispy
    5. Transfer to wire rack or paper towel-lined plate

    For the Dipping Sauce

    1. Combine all sauce ingredients
    2. Whisk until smooth

    To Serve

    1. Slice rolls into individual pieces or serve whole
    2. Accompany with dipping sauce
