Ingredients

  • 1 (6oz) Wild Planet Wild Pink Salmon

  • (8oz) Spinach

  • 3 Garlic Cloves, minced

  • 1 small Shallot, minced

  • 1 Tbsp Butter

  • ½ tsp Salt

  • ¼ tsp Black Pepper

  • (1.5oz) Cream Cheese

  • (1.5oz) Creamy Herbed Gournay Cheese

  • 1 sheet Puff Pastry, thawed

  • Juice of ¼ Lemon

  • Parmesan Cheese for topping

Directions

  1. Preheat oven to 400°F

  2. In a pan over medium-low heat, melt butter

  3. Add minced shallots and garlic

  4. Sauté until softened, 2-3 minutes

  5. Add spinach and sauté until wilted

  6. Season with salt and pepper

  7. Add cream cheese and herbed gournay cheese

  8. Stir until melted and combined

  9. Add lemon juice and stir

  10. Remove from heat and set aside

  11. Roll out puff pastry

  12. Cut into 9 equal squares

  13. Press each square into a muffin tin cup

  14. Use a fork to poke holes in the bottom of each pastry

  15. Spoon spinach mixture into each cup

  16. Make a small well in the center of the spinach

  17. Place a portion of salmon in each well

  18. Cover salmon with more spinach mixture

  19. Top with grated parmesan cheese

  20. Bake for 25-28 minutes until puff pastry is golden brown

  21. Let cool for 5 minutes before removing from tin

  22. Serve warm
