Tuna Sushi Sandwich

This recipe is a little bit like a sandwich, a little bit like a Crunchwrap, and inspired by a sushi roll! Using Gimme Seaweed Big Sheets Avocado Oil Seaweed Snacks and Wild Planet Albacore Wild Tuna paired with sushi rice, creamy avocado and fresh crunchy cucumber, this is the perfect protein-packed lunch.

This recipe is a little bit like a sandwich, a little bit like a Crunchwrap, and inspired by a sushi roll! Using Gimme Seaweed Big Sheets Avocado Oil Seaweed Snacks and Wild Planet Albacore Wild Tuna paired with sushi rice, creamy avocado and fresh crunchy cucumber, this is the perfect protein-packed lunch.

Ingredients

  • ½ cup Sushi rice, cooked according to package instructions

  • 3 Tbsp Rice Wine Vinegar

  • 1 Tbsp Sugar

  • 1 big pinch of Salt

  • 1 (5oz) can Wild Planet Albacore Wild Tuna

  • 1 Tbsp Kewpie Mayonnaise

  • 1 tsp of Sriracha (optional)

  • 1 English Cucumber, sliced

  • 1 Avocado, sliced

  • 4 sheets of Rice Paper

  • 4 sheets Gimme Seaweed Big Sheets Avocado Oil Seaweed Snacks

  • 3-4 Tbsp Furikake

Directions

  1. Cook your sushi rice according to directions on the package. While the rice is cooking, heat the rice vinegar, sugar and sea salt together in a small saucepan over medium-high heat until the mixture nearly reaches a simmer.  Remove from heat and whisk until the sugar has dissolved. 

  2. Once the rice is cooked, transfer the rice to a large mixing bowl and drizzle it with the vinegar mixture. Gently fold the rice until the vinegar is evenly mixed into the rice.

  3. Make your tuna mixture: mix tuna with kewpie mayo and Sriracha. Set aside.

  4. Slice cucumbers, peel and slice avocado, and set aside.

  5. Cut your Gimme Seaweed Big Sheets Avocado Oil Seaweed Snacks into a circle, just slightly smaller than the rice paper.

  6. To assemble: dip your rice paper in cool or room temperature water for a few seconds to soften it. Place your Gimme Seaweed Big Sheets Avocado Oil Seaweed Snack in the middle, then top with sushi rice, sliced avocado, sliced cucumber, a scoop of the tuna mixture, a second sheet of Gimme Seaweed Seaweed Snack, and then finally a second piece of wet rice paper.

  7. Holding down the middle so it stays together, fold up the sides of the rice paper.

  8. Spread Furikake around on a plate, and then dip the exterior of the sandwich in so the sandwich is covered.

  9. Drizzle oil in the bottom of a pan, once warmed, cook the exterior of the sandwich in the pan until crispy & browned. Cut in the middle, repeat for additional sandwiches, & enjoy!
