Ingredients

  • 3 Eggs

  • ½ (3.9oz) can of Wild Planet Wild Smoked Pink Salmon Fillets in Extra Virgin Olive Oil

  • 1 cup chopped Spinach

  • ¼ cup Feta Cheese crumbles

  • 1 Tbsp fresh Dill

  • ½ an Avocado

  • Pink Salt and Black Pepper to taste

Directions

  1. Crack eggs in a bowl and lightly whisk them.

  2. To the bowl, add crumbled Wild Planet Wild Smoked Pink Salmon Fillets in Extra Virgin Olive Oil, chopped Spinach, Feta Cheese crumbles and fresh Dill. Fold to combine.

  3. Spray a skillet with non-stick spray and heat. Pour in egg mixture and cook through.

  4. Fold the eggs in half and plate, then top with sliced avocado, salt & black pepper.
