This spin on a classic tonnato is made with Wild Planet Wild Smoked Mackerel, which might just be my favorite tinned fish of theirs. Directions

    To make the Tonnato

    1. Blend all the ingredients in a food processor on high for 1-2 minutes until smooth.

    To make the salad

    1. Roast the asparagus: cut ½ inch off the bottoms, lightly oil, and salt them on a sheet pan. Roast at 400°F for 10-12 minutes. Remove from the oven and chop for the salad.

    2. Assemble the salad by spreading a layer of tonnato on the serving dish, followed by the greens, chopped asparagus, additional smoked mackerel, sliced jammy eggs, and croutons.
