This spin on a classic tonnato is made with Wild Planet Wild Smoked Mackerel, which might just be my favorite tinned fish of theirs. Ingredients

    Tonnato

  • 1 (3.9oz) can Wild Planet Wild Smoked Mackerel Fillets in Extra Virgin Olive Oil

  • ½ cup mayo

  • 2 Tbsp capers

  • 2 fillets of Wild Planet Wild White Anchovies In Extra Virgin Olive Oil

  • ½ Lemon, juiced

  • Salad

  • ½ bunch of Asparagus

  • 2-3 cups of Frisée or another in-season leafy green

  • 1 (3.9oz) can Wild Planet Wild Smoked Mackerel Fillets in Extra Virgin Olive Oil

  • 2-3 Eggs, boiled for 6-7 minutes, cooled then peeled

  • Croutons

Directions

    To make the Tonnato

    1. Blend all the ingredients in a food processor on high for 1-2 minutes until smooth.

    To make the salad

    1. Roast the asparagus: cut ½ inch off the bottoms, lightly oil, and salt them on a sheet pan. Roast at 400°F for 10-12 minutes. Remove from the oven and chop for the salad.

    2. Assemble the salad by spreading a layer of tonnato on the serving dish, followed by the greens, chopped asparagus, additional smoked mackerel, sliced jammy eggs, and croutons.
